Pan fried rainbow trout

I like easy recipes. And this one is easy and delicious. If you didn’t like fish before bariatric surgery, give it a try. Tastes often change after weight loss surgery and it’s worth it to explore new healthy options. And don’t give up if you don’t love trout, there are plenty of other fish out there that have different textures and tastes that may be more palatable (i.e. cod or halibut).

  1. Rinse and clean all of the fish fillets and make sure that all the bones are removed. Pat to dry.
  2. In a small bowl mix together the celery seed, chopped parsely, pepper, salt and cornmeal.
  3. Season the fillets with the cornmeal mixture and press it onto the fish.
  4. In a non-stick skillet heat the olive oil and cook the fillets 2-3 minutes per side. The fish should be crisp and brown and can easily be flaked with a fork.
  5. Serve and enjoy!
